This will mark the start of a an exciting, and probably difficult month of veganism. <br> <br/> "Why must you wait until your husband is gone to make such a drastic dietary change?" You ask? Well because he is a very carnivorous eater and if I cooked vegan on a daily basis for him. He probably wouldn't be too happy. </p> <br/> <p>So I figured when would be a better time to eat vegan than when he's not home. This week I have made a few small dietary adjustments to ease into this change. Hopefully I will not struggle too much and find new innovative ways to prepare foods most people think suck. I also hope that this experiment will mark the start of some lifelong changes as well. I will try to post as many recipes as I can. The tower of cupcakes was donated by cupcake.love.miami for the concert 4 paws benefit event for Paws 4 You. I would link it but I am doing this from my phone. They were amazing and they had some really neat flavors. <br/> <br/> The cut out cookies, white iced mini cupcakes, and petit fours were made by yours truly, for my sisters baby shower. The take home gift was cut out cookies in a little baggie with handmade pipe cleaner chickies. You can hire me for your next party. :) <br/> <br/> The blue iced cupcake with diving ducky was made by someone in Tampa for my best friends baby shower. I had to take a picture of it. It was adorable. <br/> <br/> The Asian dish was a chicken dish from Tony Chan's Water Club at the doubletree I believe. :/ it was called lotus chicken and it was on top of a bird's nest. It was pretty good but the birds nest tasted a little stale :/. <br/> <br/> The rest of the pictures are from Ceviche 105 in downtown Miami. Every dish was delicious. I can't tell you exactly what they were called bc I don't feel like searching the info but basically there was a sweet potato puree with 3 shrimp on top for appetizer. Then we had a mixed fried seafood platter, a fried rice with chicken and a flank steak with pesto pasta. Everything was delicious but I think it was a little over priced. Ok that is it. They have a signature hot dog that is dipped in beer batter and fried. Oh yes, it's deep fried. It was huge and it took me 2 days to finish it. Fries are extra. The place is also dog friendly and condiments are stored in porcelain fog bowls. Love it. we ordered a shrimp popper appetizers. Shrimp stuffed in a jalapeno bopper, with raspberry sauce. Sorry for such a concise review but I have to conserve my cell phone battery seeing as I left my charger at work. The one I went to was in Zephyrhills, yes where our refreshing water is bottled. The city's slogan makes it crystal clear ;)."Home of pure water". So the restaurant is very similar to Denny's or IHOP, and yes it is frequented mostly by older generations, which makes it my kind of place. Menu items include breakfast, lunch and dinner. Or as some of the local patrons may refer to as breakfast, dinner and supper. Anything from an omelette, crepes or pancakes, to a soup, patty melt, or turkey dinner are all menu options. Oh yea and not to mention the pie selection. Ok let's get to the point here are the photos of what I ate. I think I forgot to take a picture of the strawberry rhubarb pie but its ok bc it was nothing to brag about. It was good. They have the presentation thing down pretty well. We ordered fried squid, fried gyoza, cheese maki, spider roll and my roll which for the life of me I can't remember th name, but it had fried whitefish. The squid was most likely frozen but they bread it in panko ad fry it. The sauce we tasty. Gyoza were pretty good. I think all these places buy frozen ones and they all come from the same manufacturer. To me they all taste the same. The cheese maki was weird. I ordered it out of curiosity of how they come. It was a chunk of chedder cease wrapped in a wonton wrapped and fried. Simple but satisfying. I could make them at home though. Both rolls were good. Mine was very tasty and the fried whitefish had a texture of chicken. At times, I forgot that I was eating fish. David got spider rolls and it was good too. But our late night snack was Mema's. It was so good. I had a tofu taco, gator rsvp and chicken tamale. Everything was good, even the chips and salsa. They serve their chips with regular tomato salsa and salsa verde, ny favorite. It was a little spicy for me but still delicious. <br/> The tamale was good, they are homemade. The tacos were good too. They are open til 1am sunday night, not sure how late the other nights of the week. This may explain my current headache this morning. <br/> I used recipes from allrecipes.com. they were slightly different measurements of the same ingredients, with the exception of vanilla extract only in the waffles. Oh yea and as a special touch, I added heath bar toffee candy pieces to a few waffles. Just made these Toffee Blondies tonight. It's a super easy recipe. <br />
I just wanted to use my retro camera ;) <br />

They are pretty dense and rich.<br />
<br />
Here is the recipe.<br />
<br />
8 tablespoons (1 stick) unsalted butter melted<br />
1 cup packed light brown sugar<br />
2 large eggs<br />
1 teaspoon vanilla extract<br />
1/4 teaspoon salt<br />
1 1/2 cups all purpose flour (spooned and leveled)<br />
1 cup toffee candy bits<br />
<br />
1. Preheat oven to 350 degrees. Line bottom and sides of an 8-inch square baking pan with aluminum foil, leaving a 2-inch overhang on two sides. Set pan aside.<br />
<br />
2. With an electric mixer, beat butter and brown sugar until light and fluffy. Beat in eggs, vanilla and salt. With mixer on low speed, add flour and beat just until combined. Fold in toffee bits by hand.<br />
<br />
3. Using a rubber spatula, spread batter evenly in prepared pan. Bake until golden and a toothpick inserted in center comes out clean, 30 to 35 minutes. Remove from oven; cool completely in pan on a wire rack.<br />
<br />
4. Using foil overhang, lift cake from pan. Peel off foil and discard. With a serrated knife, cut into 16 squares (4 rows by 4 rows).<br />
<br />
OK, now, I just copied this word for word from the book I used. You don't have to copy exactly, like any recipe you can adjust a few things. I used Heath toffee candy bits with mild chocolate. I did NOT use an electric mixer because when David and I finally moved and I got my hand mixer out of storage, I turned it on and it made a sound but nothing spun. So that went in the trash. My kitchenaid mixer is too big for my house so it's at my moms. :( I used some good old fashioned man power.<br />

Early Tues last week I texted my other half asking if we could possibly go to the BTTR later to get a little something to eat. Like maybe one thing (I didn't feel like cooking). Of course he agreed "yea we can pick up something and bring it home." <br />

Well I ended up picking it all up alone because he wasn't feeling well. The place was packed this time. I scoured each truck to see what collection wanted to make. I ended up with smorgasbord of food to bring home. While I was picking up food, I munched on a Taco Playero from Montaco. It was good, a perfect little starter snack. I love salsa verde too.My friend got the taco with the green tortilla. He also got the chicken sandwich from The Rolling Stove. He said it was delicious. Slow Food Truck had the cupcakes.<br />

Last night's BTTR was busy. There were 12 trucks! There was a pretty good turn out, and I think many people were getting foods from various trucks. This time it was seriously COLD too! I wanted to get some of that ginger tea from Miso Hungry, but instead I got some lemonade. It was good, sorta like lemon water, but with a hint of sweetness. I was loving it. Not your typical over sweet powder lemonade.<br />
Since we were in a rush we had enough time to meet up with Burger Beast, get his insider recommendations and then order food and get out of there. Sef was nice enough to let us taste the Capt'n Crunch crusted chicken strips from The Rolling Stove. OMG, they were soo good. But we ordered the burger, as per Burger Beast. That's what I was eating when I first started this. IT was really good, juicy, covered in grilled onions and delicious. I scarfed it down quick, because I had a taco dog waiting for me from <a href="http://www.montacotruck.com/">Montaco</a>. I don't remember what the actual menu term was called for the hot dog, but it was a hot dog, wrapped in bacon, covered in chopped tomatoes and some crema. It was pretty delicious.<br />

Next we went straight back to CheeseMe for the short rib sandwich, but this time with bacon. Sef, thanks a ton for the recommendation of bacon, it was super crispy and full of flavor. But next time I'm going back to no bacon on the short rib. I like to taste the short rib alone. For my preference the bacon took over the flavor of the sandwich.But it was still really good.<br />

When Burger Beast let us know that Tues. Night some food trucks were setting up in our neck of the woods, you have to imagine my excitement. We went out, in the bitter cold (haha, how often can I say this in Miami?). The trucks were set up on the perimeter road east of Biscayne Blvd, that runs from Quayside until it connects again with Biscayne Blvd. The sign said E. Dixie Hwy? but its actually NE 15th ave. If you are familiar with North Miami, it's right off Biscayne and 109th, sorta behind the now closed La Paloma restaurant and east of where KB Christmas trees has been setting up their tent for the past, who knows how many years. 7 trucks came out. <br />

I am going to try and rush through this because it has taken me a week to write it. <br />

We started off at <a href="http://www.cheeseme.com/">CheeseMe</a>. David and I remembered the short rib this time and OMG it was so good. It was the best thing that night. It was juicy, tender and full of deliciousness. <br />
<br />
Next we got <a href="http://www.facebook.com/pages/Nacho-Mamas-Mexican-Grill/136909083003940?v=info#%21/pages/Nacho-Mamas-Mexican-Grill/136909083003940?v=wall">Nacho Mama's</a> pork nachos. Those were delicious too. Simple, tasty and satisfying. Nacho Mama's ran out of chicken and a couple other things that night but they still did not disappoint. David also got a pork taco which was really good and pretty big. And what could be better, the guys were super nice and gave out drinks on the house AND they had FREE mini cupcakes. At the end of the night they gave FREE soup: shroom soup. I had it for dinner 2 days later and it was delicious, if you like cream of wild mushroom soup. I will definitely eat there again. <br />

Jefe's was good too. Mind you these are first experiences for me. Your opinions on these trucks are prob very different. I wasn't totally impressed with them but I will still try again. David ordered a fish taco out of principle even though he hates fish. So I ate it. It was ok, but I felt like it needed a little more flavor. It had coleslaw, but it needed something. Not sure what. Maybe next time I will actually try the hot sauce :/. He also ordered a burger, and I can't remember which one, but it was good. He liked it. <br />

<a href="http://www.misohungrymobile.com/www.misohungrymobile.com/Welcome.html">Miso Hungry</a> was closed by the time we wanted to order from them, but my friend did get a ginger tea from them that was pretty good. I will have to wait until next time to try them. <br />

Next we went to <a href="http://www.latinhousegrill.com/">Latin House Grill</a>. Omg, they have these adorable little mini burgers they call muffin tops. They are a little bigger than a slider, and super thick beef patty. Wow! We did a combo and got 2 muffin tops with fries and a drink. I ordered the Cubano which was a seasoned super duper thick beef patty, melted queso blanco and guava paste. Omg it was delicious. The flavor combination went very well together. I was pretty skeptical at first. David got the American? With cheddar and Bacon. I didn't try it but I know he liked it. <br />
<br />
After stuffing our faces with all that food, we felt like we had to go get gelato. That truck wasn't too busy that night considering it was like 50 degrees out. We went by and thy were closed but I asked if we could still order so they said sure. I figured they would let us order. We got mango gelato. I only ate a little because I was so cold, but it was good. I forgot to take a picture of it :/ <br />

So last night I decided to make it a date with food truck heaven, at the Miami Street Food Court on Bird Rd and 65th. It's a little bit of a haul for us but it just had to be done. <br/> <br/> I'm going to apologize ahead of time for a few things. <br/> 1. Wait we have to go the other way, we make a "we-turn" and head east. We reminisce the days of "Oh the Horror." Funny thing, that used to be the Burger Beast's store. Although I do miss the place, I must say I'm much more fond of his current burger beasting adventures. Yea I like to eat. Ok back to Bird Rd. I tell David I'm not sure what side of the street it's on, and before I could finish my sentence, like an angel in the distance, like a glistening light in the dark, like sunshine on a cloudy day, ahhhhhhh. There it was. Food truck heaven. <br/> <br/> The nights lineup: Caza Crepes, Cheese Me, and Nacho Bizness. I love it. I truly was excited like a kid in a candy store or like a pig in shit. Whichever of the two you think would be happier. <br/> We meet up with Burger Beast and chat for a few minutes. He introduces us to the matriarch of Food Cart USA. He also gives us a few insider tips and recommendations for the trucks that stood before my palette. After what seemed like a short lifetime, we head for the first victim, I mean truck. Nacho Bizness. <br/> <br/> I ordered a carne asada taco and David got the Burger Beast recommended burger. It's not on the menu. I was surprised David was in an adventurous mood. He got the pineapple coleslaw on the burger! That baby was a thick beef patty, cheese, pineapple coleslaw and then smothered in BBQ sauce. All on a kaiser roll type bun. They were both delicious. He didn't approve of my taco, I guess he wasn't THAT adventurous, plus he hates cilantro. The taco was carne asada, corn, onions, a lot of cilantro, lime, and some cream sauce, all wrapped in two white corn tortillas. It was simple, to the point and good. It hit the little Mexican spot in my stomach. <br/> <br/> Next! <br/> <br/> On to Cheese Me. David has eaten from them before so he told me I HAD to get a kobe slider. And so I did! I ordered a kobe slider with grilled onions and aged Gruyere. (if You leave here knowing anything about me, it's that I freaking LOVE Gruyere and any other cheese for that matter). Needless to say the slider was wonderful. A little taste of heaven, and it looked like the baby fix-its from *Batteries Not Included. It couldn't get any better! <br/> We also ordered the pulled pork sandwich on Texas toast with cheddar cheese. David couldn't remember what burger beast had recommended. We later found out it was the short rib we were supposed to order. Ohwell. It was still pretty damn good. A little greasy but good. <br/> <br/> Lastly, Caza Crepes. <br/> Yes they make crepes. After the two other trucks, we were getting full. We had hopes in ordering a burger beast recommendation of a ground beef galette with an egg. But by he IME we made it to that truck, we were full. We decided to go with a sweet crepe. We went with a pineapple and chocolate crepe with chocolate and caramel on top. It was a good Crepe, but I've never had pineapple in a crepe before so it was new territory for me. David thought it was strange but he still liked it. Needless to say, we didn't finish it and I ate the rest for breakfast this morning. All three trucks were delicious. It isn't easy to invent baked goods when you don't understand the basic science to measurements of flour, sugar, water baking powder etc. So I find a recipe and alter a little. I mean most of the recipes you find are going to be the same if not very similar. But like I said, it's very easy to mess up a cake if the measurements are off. Pies are a little easier, luckily. :)</span></b><br />
<b>The recipe I am going by (I changed a recipe I found online) Hope it's edible.</b><br />
<b>This is the semi-homemade berry berry pie.<br />

<b>Crust</b><br />
9-inch Deep Dish Pie Crust (with top) (I pre-baked the bottom crust according to package directions)<br />
1 beaten egg<br />
<b>Filling</b><br />
2 cups blueberries<br />
2 cups blackberries<br />
1/2 cup sugar<br />
1/4 cup flour<br />
1/8 teaspoon salt<br />
2-3 teaspoon grated lemon peel, I recommend using organic lemons for this. (I got 3 teaspoons from 1 lemon)<br />

3 Tablespoon lemon juice, you will probably need 2 lemons. (I used the leftover lemon juice to make a refreshing lemonade sweetened with Agave. mmmm)<br />
1 1/2 tablespoon butter<br />
Preheat oven to 400 degrees.<br />
Prepare crust in deep dish.<br />

Add the top crust and seal. You can use any extra dough to decorate top. Cut a couple of slits in top crust.<br />
Take beaten egg and brush on the top crust to give it a shiny finished look. You can even sprinkle some sugar on the top too.<br />

Ok so today is zilla day. And its my first official zilla day in a few weeks. I have been really sacking off on the blows lately. I came up to north Miami beach to pick up a car with the future ma in law. We always go eat something and since this place she has gone to for years is right next to the dealer, we went to eat there. It was good. Doubles are like little pancakes with chickpeas, veggies and sauce in the middle. You eat it with your hands and scoop up the beans with pieces of flatbread. A little spicy but gooood. Everything is made with traditional Indian spices, but L.C. Is from Trinidad. So her food is made in the style of street carts of Trinidad. <br />

The roti comes with different meats, beef, chicken, goat, etc. I got veggie. Similar ingredients as the doubles except, more spices/spicier and with mashed potatoes. This is all then wrapped up into a present with the roti (unleavened bread). Sort of like a flatbread or like a giant tortilla, but way better. Full of flavor, spicy kick and L.C. Herself small talking with you at the counter. <br />

Now this isn't your normal eatery. There is no A/C and there are only 3 tables in the restaurant. The other seating is at the bar/counter where you order. A huge shop fan situated at the entrance blows fairly warm air on you while you eat. I'm not complaining, just preparing you for your visit. <br />

They also have a great assortment of island beverages like champagne kola and ginger beer. I would definitely eat there again. Reasonably priced, good portions, and delicious home cooking taste. <br />

I venture through the tri-county are in search of wedding stuff. I haven't been consistent with the food postings. Last week I did post Carmela's and that was after picking up my engagement ring. We usually have breakfast and maybe lunch. Sometimes we get snacks too. Today we started the day off late but we got lunch after picking out David's suit and the wedding party suitable. We went to one store and found exactly what we were looking for. Well atleast what I was looking for. <br/> We ate at an old place in North Miami called Here Comes the Sun. It's an old health food store and natural/vegetarian restaurant. They are well known for their Colombo frozen yogurt. I love that there are baskets of saltine crackers in every table, so you can munching while to peruse the menu. <br/> <br/> I used to frequent the place as a child with my mom (she was a hippie back in the day, and used to work at a health food store). So I grew up eating tofu, sesame honey snacks and tiger's milk. We always used to stop in and get some frozen yogurt. I was excited to pay a visit to this nostalgic place. I ordered a sun burger: <br/> <br/> I was relieved to know that it is a homemade veggie patty and its cooked rather than sun-baked. Phew. It was prey delicious and much thicker than I had imagined. It was served on a pita cut in half with salad in the middle. It comes plain but you can always put some sprouts and veggies from the salad in it, that's what I did. Next time I will order if with cheese (for the vegans, soy cheese is on the menu. I also poured some here comes the sun sauce, located on every table in a mustard bottle. It's a musk paste based sauce that was pretty tasty yet very simple. I couldn't finish the burger but I'm actually eating the other half in the car right now. For dessert I had to get some frozen yogurt. One thing about this place is that I have this childhood memory of the frozen yogurt being very tart, the way it SHOULD be. The last time I ordered frozen yogurt from there was when I was in high school. That was prob about 10 years post childhood visits. When I got the yogurt, my memory was tarnished because the yogurt wasnt the same. It wasn't tart the way I remember it. I decided to try the yogurt again and see if I could relive my childhood once again. Failure! It still isn't the same. It was just regular sweet vanilla frozen yogurt. Ugh, what a let down. Another let down in the size and price. You can see in the picture that its like a sample size of yogurt. That's on the menu as a 2oz I believe. I actually paid $2.50 for that thing! ok well I finally decided to make stuffed French toast. I've been wanting to make it for a while and today was the day. My inspiration? holla! (as in challah) So here's what I did with half-ass measurements. <br />
1/2 loaf challah bread, cut into slices. <br />
2 eggs <br />
about 1/2 tsp vanilla extract <br />
you can also add a little whipping cream to thicken the egg. I didn't have any. <br />
Some cinnamon ( I used ceylon from Costa Rica) <br />
some nutmeg <br />
<br />
for cream cheese filling: <br />
1/2 a block cream cheese. (I Think they come in 8oz packages, so about 4ozs) <br />
some Orange zest <br />
1/2 tsp vanilla extract <br />
if you want to make the cream cheese sweeter, you can add some powdered sugar. <br />
Chopped pecans or walnuts optional. (I Didn't use nuts) <br />
<br />
Fruity Sauce: <br />
1/2 a 12oz or so jar of seedless raspberry or apricot jam/preserves <br />
juice from 2 oranges. <br />
<br />
Powdered sugar for dusting <br />
<br />
Whisk the egg, vanilla, (cream), nutmeg and cinnamon together in a large shallow bowl. <br />
<br />
Mix the cream cheese, (powdered sugar), Orange zest and vanilla together until well blended. (Stir In nuts). <br />
<br />
Spread some cream cheese mixture onto a slice of challah, then cover it with another slice to make a sandwich. Dip the sandwich in the egg mixture and coat both sides evenly. Cook each side on a greased pan/griddle. Cook until just a little brown or however crisp you like. Make the remaining sandwiches and repeat until the cream cheese mixture is gone. <br />
<br />
While you make the sauce, you can put the sandwiches on an oven safe dish and keep in a warm oven until sauce is ready. I put my oven to the lowest temp setting of 170. <br />
<br />
In a small saucepan, on LOW heat, cook the orange juice and jam until a thick sauce forms. I capitalize LOW so that you don't make the same mistake I made and overflow purple sticky sauce all over the stove. My setting was originally set just above the lowest setting on my stove. Be careful and watch it like a hawk. Stirring with a whisk constantly. It doesn't have to be that thick, just do it to your liking. <br />
Once the sauce is made, take the sandwiches out of the oven and serve warm with warm raspberry sauce on top. Make it as saucy as you want. Sprinkle with powdered sugar and you can even add a dollop of whipped cream, mmmmm. <br />

The place is small, very cozy, like you're sitting on your patio. The walls are adorned with photos of Italian dishes and memories of Italy. Above the cold cases were photos of Carmela herself, making fresh mozzarella. <br/> We walk in and there's a little old lady sitting at a table with her walker. She looks like she comes her on a regular basis. Her nurse, whose name I later learned was Vera, sat at a table beside her. The old lady eventually scoots her way with her walker, up to the display case to order a pasta dish to go. She asks us how we like it, "isn't it great? I'd eat all this stuff if I could" as she points to her teeth. Dentures. <br/> <br/> Carmela, the matron of the house, with her full on Italian accent, comes from behind the display cases to greet us. She gives us options for sandwiches and asks what we like. She goes down the list of things she can make for us. Very friendly and accommodating. She says "I can makea vegetarian, or the chicken parmagiana, whatever you want." <br/> <br/> I enjoyed hearing her tell us about how she went to Subway to finally try a sub and see why everyone eats there. When she opened the sub, she said: "I trow ita away, I could nota eat it. Itsa so gross. Da bread was no good. I tella people, if you wanna a $5 sub, you go to subway" Amazing, EVERYTHING is homemade. Lasagna with homemade bechamel, fresh grilled eggplant with garlic and mint. Homemade FRESH mozzarella. OMG I can go on and on. <br/> The place is located in a shopping plaza called Emporium Shoppes on Okeechobee just east of Haverhill Rd. Maybe a couple miles east of the turnpike. If you're on a road trip and need a bite of good fresh Italian food, stop off at Okeechobee. Right next door to her place is a Jewish bakery and a farmers market. <br/> <br/> I had the Sicilian: grilled eggplant, baby spinach, roasted red peppers and fresha mozzarella! It was gigantic and delicious. And it's not on my diet, but I skipped breakfast :/ so... <br/> <br/> He place is unexpectedly great for a small plaza deli. I loved it. This was the last place we ate at before heading to the airport. We had the pleasure of spending our last meal in LA with our good friend Corey. So here it is, the last post of LA and then I can move on with my life!<br />

A Rambutan is a small fruit that grows in Malaysia, Indonesia, Philippines, Sri Lanka and South Asia. It is in the same family as lychee- Sapindaceae. It looks similar to lychee as well except that the their skin is much more hairy.<br />

First I saw it fitting to get a Thai Iced Tea. Seeing that when David and I first went to LA a couple years ago, we met up Corey again and he took us to eat Thai at this really cute little place near his old job. The place was really small and quaint, enough seating for only like 35 people. When we walked in there was a lady preparing green beans at one of the tables. She was sniping the ends and putting them in a bowl. David loved it. Well that was my first Thai food experience and Corey got a Thai iced tea, which I had never had before and he let me taste it. I was HOOKED! I ordered my own and every time since then that I have gone to a Thai restaurant, I have ordered Thai Iced Tea.<br />

Next I ordered Tofu Tom Kha soup (one of my favorites)<br />

bird’s eye chili and lime juice." It was delicious and spicy.<br />
